Quick and Easy Vegetable Pot Pie

1 (10.75 ounce) can condensed cream of potato soup
1 (15 ounce) can mixed vegetables,drained
1/2 cup milk
1/2 teaspoon dried thyme
1/2 teaspoon ground black pepper
2 (9 inch) frozen prepared pie crusts,thawed
1 egg, lightly beaten
Directions:
1. Preheat oven to 375 degrees F (190 degrees C).
2. In a medium bowl, combine potato soup, mixed vegetables, milk, thyme, and black pepper.
3.Spoon filling into bottom pie crust. Cover with top crust, and crimp edges to seal. Slit top crust, and brush with beaten egg if desired.
4.Bake for 40 minutes. Remove from oven, and cool for 10 minutes before serving.
Breakfast Casserole

10 eggs
1 lb. browned sausage pieces
2 lbs. shredded cheddar cheese
Butter (to spread on bread)
Salt & Pepper
1. Brown sausage, drain.
2. Line casserole dish with slices of bread buttered on 1
side. Put in buttered side down.
3. Beat eggs with whisk, add salt and pepper.
4. Pour over bread slices.
5. Sprinkle sausage over top, then sprinkle cheese.
6. Bake at 375 for 35-40 minutes (until bread browns). Let
it cool for approximately 10 minutes.
You can make ahead and refridgerate it overnight. Just leave the cheese off and sprikle it on right before baking.

Sour Cream Potatoes
ReplyDelete2 lb. bag of frozen hash browns
1 cup sour cream
2 cups shredded sharp cheddar cheese
1 can cream of chicken soup
1/2 cup diced onion
1/4 cup margarine
1 cup crushed Corn Flakes
Saute onion and potatoes until partially cooked. Add remaining ingredients. Mix well and spoon into 13x9 baking dish.
Topping: Combine 1/2 margarine, melted with crushed corn flakes.
Sprinkle topping over entire dish. Bake at 350 for 45-60 minutes.
